1. Grading of Stainless Steel Flatware
Each piece should be thick at the base of the handle to resist bending. It should be tapered to the correct thickness at the edge of the bowl and tip of the handle. This gives the graded pieces the right "balance"and a good feel in the hand.
2. Edging of Stainless Steel Flatware
Look for smoothness along the edges of each piece. A smooth edge indicates that the piece has been delicately buffed and polished and sealed to protect against corrosion.
3. Tining of Stainless Steel Flatware
Look between the fork tines. Are they rough, unfinished? You'll find that the finest stainless has been finished between the tines. If they're not perfectly smooth, they are a source of trouble. When not finished properly, this area is hard to clean, the roughness is a catch all for food particles and because it's not sealed is subject to attack by corrosion.
